Vanilla is the last ingredient in the cookies. (Yep, these almond cookies only have four ingredients. I know! Crazy, right?) You use a generous amount of vanilla extract! Two teaspoons. However, since the almond and maple bring such strong, lovely flavors to the table, the vanilla extract needs a little boost to get noticed. If you don’t love vanilla, reduce it to one teaspoon or omit completely. (If you omit, add two additional teaspoons of maple syrup to the recipe.)
Grass-fed meat is recommended on the paleo diet because it is leaner than meat from grain-fed animals and has more omega-3 fatty acids, the healthy fats that reduce inflammation in the body and protect your heart. A typical American diet is high in saturated and trans fats and lower in healthy poly- and monounsaturated fats, hence the paleo diet's emphasis on grass-fed meats, as well as seafood.

I’m sorry to hear these didn’t work out for you. I’m not sure what you mean by “the flour never became anything but crumbled powder.” Were you making your own almond flour, and the ground almonds didn’t become fluffy enough? Or do you mean that there wasn’t enough moisture for the cookies to hold together? I’ve made these cookies many times, and this ratio of maple syrup and coconut oil (or butter) has always produced a delicious result. You can always add additional coconut oil or maple syrup if the cookie dough doesn’t look like it will hold together. I hope you and your family have a Merry Christmas, regardless!

With grains excluded from the Paleo diet, nuts and seeds are popular replacements in Paleo versions of bread, cereals, pies, cakes and other baked goods. They form the basis of many dairy-free milks, flours and nut butters. They’re also incredibly popular and sustaining snacks and salad toppings. While nuts open up a range of previously non-Paleo offerings, they’re nevertheless high in calories and undesirable phytic acid. Consume them mindfully.
There is little argument over the health benefits of fruits and vegetables. They are chock-full of vitamins, minerals, fiber and antioxidants. The only caveat for paleo dieters is that some vegetables are starchy (e.g., potatoes) and some fruits are higher in sugar (e.g., bananas). So, if you are trying to lose weight or watch your blood sugar levels, eat these in moderation. In fact, potatoes are banned from some versions of the diet.

Thank you for posting this! I have been practicing the paleo diet on and off for a few months and getting little cravings in between is hard because I know I can’t eat junk. I made your cookies and they are great!!! I have been trying different recipes and none of them were just right for me. I did everything by the recipe except one item. When I placed them in the fridge – I decided to try rolling them into a log so that I could just slice and bake and for me – they turned out great and that was so easy to do. Here’s a great game day dip that you can serve up and feel like you’re having a real treat. Use one of the chip recipes on this page to scoop up this flavorful dip. It’s a sure winner when bacon and bleu cheese join spinach and artichokes. It’s like taken a proven success and adding two more delicious ingredients to it. You may want to drop the bleu cheese if you know for certain that you can’t handle any cheese, but many Paleo eaters will make an exception for a bit of cheese on occasion.
The China Study is frequently cited when criticizing the Paleo Diet – focusing on a vegetarian diet and consuming rice is healthier than the Paleo Diet. I respectfully disagree with that nutritional philosophy and strongly disagree with the conclusions drawn from that book , and will leave you to make your own conclusions based on your own self-experimentation.

If you're interested in the paleo plan but don't think you want to be so strict, you don't have to be all-or-nothing with your approach. Consider adopting some eating patterns from paleo and skipping the ones that don't work for you. For example, try just eating more fruits and vegetables and cutting down on added sugars. If you feel unsure about grains or dairy, talk to your doctor or a registered dietitian to determine what's best for your body.
