Pseudograins like quinoa, amaranth and buckwheat are less harmful but they are still dense sources of carbohydrates and contain similar antinutrients to grains. They should be prepared carefully to remove some of the anti-nutrients such as phytic acid. Soak such grains in salted water for 8-12 hours, rinse and then cook well before consuming. Ugh, I tried this recipe, but it was not good. I’d rate it a one star, just a bit above cardboard. Granted, I did not use Honeyville or nuts.com brand of almond flours suggested, but I did use a premium brand (Blue Diamond finely sifted flour) and even weighed out the ingredients to be certain I followed the recipe precisely. I don’t need paleo, but do need gluten-free. I have other cookie recipes that are great, and if a recipe is not great, I don’t want to waste my time or money on it. Sadly, I will not be making this again.

Chocolate chip cookies without any sugar or chocolate wouldn’t really taste like chocolate chip cookies anymore…you could try substituting a calorie-free sweetener for the sugar if that’s what you’re looking for. Since cacao mass has no sweetener, I imagine it would be pretty bitter in cookies, but you could give it a shot – I’ve never used it before so I’m unsure of how it will work.
DIY roasted nuts are easier than you’d think—all you need is a bag of mixed nuts, an egg white, and go-to spices: sea salt, pepper, rosemary, sage, garlic powder, and paprika. Coat the nuts in the egg white in one bowl, and mix all the spices in another. No on paleo diet but awesome cookies. My husband’s favorite and kids loved it too. Very crispy cookies. Used 1/2 cup of coconut oil to help it form better. Probably could have used a little less. Kids allergic to almond so used whole wheat pastry flour. Used Agave nectar 6 Tablespoons, added 1 tablespoon of chia seeds and 1 tablespoon of flax seed ground. By the way this is my favorite cookies. Next time I’ll try adding oats.

They did not rise of consequence, but I’m not complaining since they tasted excellent and they were the treat I was seeking. Had never used coconut sugar and it was surprisingly good. Stephany – I’m *wish* we could! I prefer baking with coconut oil whenever possible, but when I’ve tried it, the cookies spread so much and didn’t get the crackly top. I couldn’t ever really cobble together the right amounts that would offset the spread and texture change. If you try it and have better luck than me, I’d love to know what other adjustments you make!

There are some debates over whether some legumes are safe to consume in moderation, if prepared properly (soaked for 12 hours and then cooked really well to remove the phytic acid and make them easier to digest). These sweet and sour gummy candies are actually good for you. Pretty weird huh? They are really easy and actually a lot of fun to make. All you do is mix the ingredients, put them into a mold either by pouring or using a plastic bag with a small hole in the corner. Then either put them in the refrigerator or freezer to set depending on how big of a hurry you’re in. You could make them any shape or color you’d like. This is like a traditional smoky, garlicky, and salty snack mix but it’s made with only real clean ingredients. It can be somewhat addicting. It’s just a nice pure nutty goodness with smoked spices and garlic infused olive oil. You can make it with any kind of nuts you’d like. Walnuts and pecans were used because they are lots of nooks and crannies for the spices to grab onto and stay. The almonds were used to add some extra crunchiness. There are cashews in the picture.

This time they’ve managed to make a jerky out of eggplant, which makes it great to include when you’re having some beef jerky. OMG! To me, these are the “holy grail” of chocolate cookies and even better because they are paleo! They were so easy to make and better than the usual tollhouse recipe I grew up with. I chopped up the chocolate super fine so when it baked, the cookies came out into flat discs- which I happen to LOVE a cookie like that. So I was very pleased! The best part about paleo baking is that you actually get filled up and even though they are such delicious cookies, I was very satisfied after only eating two. With other cookies made with regular flour, I tend to overeat. Thank you for this recipe. It is absolutely going to be a keeper! Put them in the oven for about 5-7 minutes, then take them out and slightly flatten them with the back of a spatula. Put them back in the oven for about 5 more minutes, or until they look done. I like to take mine out RIGHT when I see just a hint of golden brown, which is one of the best baking tips that my aunt shared with me. If you do that, they won’t look done, but they are-and they’ll be soo soft and chewy. Even after they’ve cooled off!
