Stephany – I’m *wish* we could! I prefer baking with coconut oil whenever possible, but when I’ve tried it, the cookies spread so much and didn’t get the crackly top. Ugh, I tried this recipe, but it was not good. I’d rate it a one star, just a bit above cardboard. Granted, I did not use Honeyville or nuts.com brand of almond flours suggested, but I did use a premium brand (Blue Diamond finely sifted flour) and even weighed out the ingredients to be certain I followed the recipe precisely. I don’t need paleo, but do need gluten-free. I have other cookie recipes that are great, and if a recipe is not great, I don’t want to waste my time or money on it. Hi Steve, coconut flour absolutely will not work here because it’s 3x more absorbent than almond flour. You only want to use coconut flour in recipes that call for it because it performs so uniquely. If you had to use coconut flour, you would want to use 1/3 of the amount, but I would recommend using my coconut flour chocolate chip cookies instead, which have been formulated specifically to use that kind of flour.

Yes, I did it right. Only 3 ingredients. Are you like some people and just pass up plantains in the grocery store? I used to be like that. I didn’t even know what they were. They looked weird and terrible. I don’t think like that anymore since I’ve gotten to know them. You can either choose them when they are on the yellow side or the green color side. The only difference is that the yellow ones are riper and therefore sweeter. The green ones are less ripe and won’t taste as sweet. That choice is just up to your preference. The yellow ones are a little harder to work with because they are more sticky. I do recommend green but you should experiment and have fun. Don’t worry about the skin being brown and a little bruised. The skin on plantains is really thick so the fruit is more protected than with a banana.

Perfect! I added pecans to your recipe and they came out perfect. The only issue I have is controlling myself so I don’t eat them all at once. I used butter instead of coconut oil and erythritol + molasses instead of coconut sugar to create my diabetic version of your cookie. I also added chopped pecans. Mmm-mm! Thanks. I’ve been doing a lot of sweets lately and I think it needs to come to an end! My kids would rather I not stop though 🙂 And I agree that outside pressure often gets us to do things that aren’t good for us – a lot of times without realizing. Imagine having a supply of these at the ready for times when you’re hungry but your next meal won’t be for a few hours. You’d be able to quell any signs of hunger which can often lead to diet-ruining food choices. However, as long as you’re eating balanced Paleo meals in the proper portions you shouldn’t be getting hungry until several hours after you’ve eaten.
These look so chewy and gooey and delicious! I was actually considering doing a Paleo month to figure out if any of my lingering stomach symptoms are due to dairy or other allergens, but I think it would be tough for me to give up autumn baked goods and it’s hard to be tree nut free and still Paleo. They do take a bit of time to make, so maybe not the best choice if you are looking for something fast to make to lessen your hunger pangs. These have meat and vegetables in pretty equal amounts, with bacon wrapped around the peppers and chicken breast acting as the stuffing. They kick it up a notch with some red pepper flakes so these will be spicy, bacony, and loaded with flavor. You might need something to dip them in, might we suggest this Paleo friendly Ranch dressing?

Amanda -I haven’t ever tried them with less baking soda, but you might be able to give it a try. Baking soda often helps cookies spread (baking powder often “puffs,” baking soda often “spreads”), so you’d probably have some spread differences. If they spread too much, you can head this off by adding an additional 1-2 Tbsp of flour to the batter. If they don’t spread, you might be able to use less flour to offset the problem. Again, I don’t know for sure since I haven’t tested them with less baking soda, but I’d love to know what you think if you give them a try. (I just know how expensive paleo baking ingredients are, so I’d hate for you to have to waste any!)

In US English recipes, almond flour always means what you probably call “ground blanched almonds.” We don’t even have the deoiled / defatted “almond flour” that’s sometimes sold in other countries. Coconut flour is coconut flour. “Coconut flour is a soft flour produced from dried coconut meat.” I hope that helps!

These chips are made from butternut squash, but you won’t be able to tell by the way they taste. They bake up so crispy and crunchy you’d swear it was a potato chip if you didn’t know any better. They are using gingerbread seasoning on these, which is an interesting choice for a snack, and sure to give your taste buds a new experience. Compared to most snacks you’ll enjoy the fact that these rank pretty well in terms of the amount of carbs they contain, as well as the calories. Not that you’re counting any of that stuff on Paleo, it’s just nice to know.
No on paleo diet but awesome cookies. My husband’s favorite and kids loved it too. Very crispy cookies. Used 1/2 cup of coconut oil to help it form better. Probably could have used a little less. Kids allergic to almond so used whole wheat pastry flour. Used Agave nectar 6 Tablespoons, added 1 tablespoon of chia seeds and 1 tablespoon of flax seed ground. By the way this is my favorite cookies. Next time I’ll try adding oats.

Factor in the “carb flu” you might go through in the first few weeks (as your body gets weaned off of carbohydrate fuel and habits), and most people give up on the Paleo diet long before it creates lasting change!

I’d recommend going by weight. If you didn’t, I recommend trying again because every now and then, I accidentally leave an ingredient out of a recipe when baking and don’t realize until later. I know it’s probably not the answer you were looking for but it’s the only thing I can think of if you didn’t make any changes at all to the recipe.

Almond butter and most other nut butters, like sunflower, coconut, hazelnut, and cashew butter, are Paleo-friendly and make for a tasty treat. Try nut butter spread on bananas or apples for a healthy snack, or even just a spoonful right out of the jar, which is a decadent treat. If you’re counting calories, cashew butter has the fewest, at about 94 per tablespoon, followed by almond butter with 98. Plus, nuts offer a ton of health benefits, including fighting diseases such as heart disease and cancer, so here are more reasons to snack on them. Note: Peanuts are not Paleo, which means peanut butter is off limits.
