I have been a chef for many years and had to go paleo due to health issues so I felt like I was missing out on cookies! I have to say these were the best choc chip gluten free cookies I have ever eaten felt like I was eating gluten cookies if not better! I followed the recipe to the letter I used unrefined coconut oil but I just wanted to ask what type of coconut oil do you use for this recipe refined or unrefined? Also can you use less coconut sugar? I love them as they are just thought to ask for other people sake some like less sweet things :) thanks a ton for this recipe your a blessing :)

Unlike many traditional stuffed pepper recipes, these stuffed bell peppers are stuffed with things you might actually eat while watching the big game. Basically it entails mixing up a batch of buffalo chicken salad, complete with chicken, hot sauce, and bleu cheese, and then stuffing them into a pepper. This means you’ll be getting a nice balance of vegetables and meat, as well as that classic buffalo flavor with the hot sauce and bleu cheese. Plenty of protein in this snack that eats like a meal if you need it to.

These sweet and sour gummy candies are actually good for you. Pretty weird huh? They are really easy and actually a lot of fun to make. All you do is mix the ingredients, put them into a mold either by pouring or using a plastic bag with a small hole in the corner. Then either put them in the refrigerator or freezer to set depending on how big of a hurry you’re in. You could make them any shape or color you’d like. I’ve made these numerous times now after a friend recommended them, and they are fantastic!! I wouldn’t say they’re a healthy substitute to normal/traditional chocolate chip cookies because they’re not quite the same. Rather, I’d say these are in a different category: much more moist, rich with hints of coconut that do not overpower the cookie, and an excellent satiation for the carb- and sugar-wary sweet tooth. Be sure to at least double the recipe because 12 cookies will NOT be enough!


Let’s get this out of the way upfront: I know calling a cookie recipe the “world’s easiest” sounds a bit ridiculous, but I can explain. The name started out innocently enough — one day, I created an easy-to-make almond cookie recipe. I adored this recipe. In my excitement, I’d say to friends, “You have to try these almond cookies; they’re, like, the world’s easiest cookies.” And well, the name stuck.

Of course, snacking is completely optional on a Paleo diet. In fact, many people end up naturally eating only two meals per day, but it doesn’t mean that snacking is a bad idea, especially if the snack only contains healthy ingredients and prevents you from indulging with bad foods. They can also be great when on the go or as something to eat post workout. Just remember that your snacks should respect the basic principles of Paleo. This means that most fruits and nuts should be consumed only in moderation. Most fruits are high in the sugar fructose, which is toxic in higher doses and most nuts are high in polyunsaturated fat (PUFA), especially the omega-6 PUFA. Refer to my article on nuts and seeds to know about the best choices. This also means that snacks containing mainly saturated fat or animal protein are usually great.
Roll the dough into 8 (75-gram) balls and place the remaining 1/4 cup (43 grams) of chocolate chips on the top and on the sides of the dough balls. You can also roll them into 16 smaller balls but then you need to adjust the baking time (a few minutes less than recommended below). Place 4" apart on the prepared baking sheet. Press the cookies down lightly with the palm of your hand.
Stephany – I’m *wish* we could! I prefer baking with coconut oil whenever possible, but when I’ve tried it, the cookies spread so much and didn’t get the crackly top. I couldn’t ever really cobble together the right amounts that would offset the spread and texture change. If you try it and have better luck than me, I’d love to know what other adjustments you make!

I made your cookies and they are great!!! I have been trying different recipes and none of them were just right for me. I did everything by the recipe except one item. When I placed them in the fridge – I decided to try rolling them into a log so that I could just slice and bake and for me – they turned out great and that was so easy to do. That said, fruits (even paleo-approved ones) contain large amounts of fructose which, while much better than HFCS (high-fructose corn syrup), is still sugar. If you’re looking to lose weight on the paleo diet, you’ll want to cut back on your fruit intake and focus more on the vegetables allowed on the paleo diet. This is a classic gingerbread cookie recipe Paleo-style. Yup, you could make these and decorate your tree with them and eat a few too. You could make these and give them away to your friends and neighbors if you do that sort of thing. Sorry for just now seeing this! You’re the first person in about 600 reviews to say that they didn’t come out well so something definitely went wrong. Did you maybe pack your almond flour very full? I’d recommend going by weight. If you didn’t, I recommend trying again because every now and then, I accidentally leave an ingredient out of a recipe when baking and don’t realize until later. I know it’s probably not the answer you were looking for but it’s the only thing I can think of if you didn’t make any changes at all to the recipe.
I have been baking gluten free for over 10 years and thought I had tried every cookie recipe out there, but alas I had not. I just made this recipe exactly as written and it is truly THE BEST GLUTEN FREE CHOCOLATE CHIP COOKIE OUT THERE! I wasn’t going to make them so big because I like to indulge in moderation but I decided to try giant cookies and I may never go back! I believe the size plays a big part in the success of this cookie but I’ll try them smaller next time and let you know the difference! I used butter and coconut sugar and followed the directions – AMAZING!
Contrary to popular belief, fat doesn’t make you fat; carbs do (and the Standard American Diet contains a ton of them!). Natural oils and fats are your body’s preferred sources of creating energy, so it’s best to give your body what it’s asking for. The following are some of the best types of paleo diet oils and fats that you can give your body if you’re in need of some additional energy. 

Grains like wheat, barley, oats and corn simply don’t stack up on the nutritional front, with modern cultivars engineered for speed of growth and pest resistance rather than nutrient density. What’s more, the milling process tends to remove most of the nutrients that remain in those grains, meaning the end product is virtually pure carbohydrate. Throw in a heady dose of anti-nutrients like lectins and phytates, and one starts to see why grains are better left off the menu.
These red pepper poppers are great for game day snacking, or anytime you get the notion. They do take a bit of time to make, so maybe not the best choice if you are looking for something fast to make to lessen your hunger pangs. Eliminating processed foods as recommended by both the Paleo diet and clean eating can help you keep your salt intake within the 2,300 milligrams per day recommended for healthy people, as well as limit added sugars as suggested by the 2010 Dietary Guidelines for Americans. The emphasis on fruits and vegetables in these diets also helps you consume the recommended 21 to 38 grams of fiber and the recommended 4,700 milligrams of potassium per day. A study published in August 2009 in "The European Journal of Clinical Nutrition" found that following a Paleo diet helped participants improve their insulin sensitivity and lower their blood pressure, cholesterol and triglyceride levels. Another study, published in "Cardiovascular Diabetology" in July 2009, found that the Paleo diet help participants lose more weight and achieve greater improvements in blood glucose control than the typical diet prescribed to diabetes patients.

Well, essentially pork rind is the skin of a pig, that when fried, boiled, and/or baked creates a crispy, airy chip-like consistency. Like potato chips, pork rinds also come in a bunch of different flavors, such as BBQ, salt and pepper, and cheese. Make sure to check the ingredients of store bought pork rinds, as only a handful are truly Paleo snacks.


Kale chips are one of the healthiest snacks on the planet, and you don’t have to be a gourmet chef in order to get them right. The beauty of eating kale chips is that there’s no debate over whether they are Paleo or not. The ingredients are as simple as it gets: as much kale as you want with enough olive oil to coat them, and then some salt and pepper until you’re happy with the way they taste. Making them is super easy, and doesn’t take long from start to finish, maybe 20 minutes total. Eat these for a protein and fiber packed snack with lots of vitamins and minerals.
Much better than expected! I had to use honey instead of maple syrup (I was out)… And I wasn’t sure they were going to turn out well – the batter was super crumbly, so I added 2 more tbsp of coconut oil and then using a cookie scoop, I mashed the batter into it to make rounded balls. The ones I mashed in like that didn’t crumble when they came out of the oven – they stuck together well.
Nuts and seeds – these guys are nutritious but many nuts and seeds are high in Omega-6 fatty acids which can be pro-inflammatory if consumed in large quantities and when your diet is not balanced by an equal amount of Omega-3 fatty acids found in oily fish like salmon and sardines, eggs and leafy greens. Basically, don’t gorge on buckets of nuts and seeds every day. The same goes for nut meals and flours such as almond meal. Whenever possible, try to activate nuts and seeds by soaking and then dehydrating them back, which makes them easier to digest.
A more controversial argument for why legumes and common grains are avoided is because of their high phytic acid content, which is thought to reduce the absorption of certain nutrients like iron zinc and calcium (6). However, phytic acid is also found in many paleo approved foods (like almonds and hazelnuts), and is associated with some health benefits - like protective benefits against kidney stones, antioxidant properties and a suggested link to lower risk for colon cancer (7,8,9). Bottom line, there really isn't any evidenced based reason to avoid these foods because of phytic acid. 
Use the chart below to build the perfect snack. Your goal: hit at least two out of the three columns. Achieve ultimate snacking success by hitting all three columns! Doing this will not only provide you with essential macro- and micronutrients that will keep you healthy and your body functioning optimally, but it will also ensure you stay satiated until your next meal.
If you’re craving toast or bread, you probably need more nitrogen. You can get that from high protein meats and fish. Don’t think of meat as a “snack”? Make some jerky. Even if you don’t have a dehydrator you can still make jerky. All you need to make jerky is a bit of time, some mild heat, and a dry environment. If you’ve been buying jerky, save yourself some loads of cash and make it yourself!

I may have to battle the grocery shopping hordes tonight and get the ingredients, but I can pig out guilt-free on Sunday! One way to avoid eating potatoes as a snack is to replace a popular snack like potato chips with a healthier version. Using zucchini in place of the potatoes is a great idea, and gives you added nutrition. Zucchini makes a great choice to make into a chip because all it requires is some slicing and you have nice round pieces ready to be made into chips. They are easy to make, and the recipe is versatile in how it lets you dust them with whatever seasonings you like. This means you could make them BBQ Zucchini chips, or Ranch Zucchini chips, just by adding different seasonings. Just be sure to check the label on the seasoning packet to see if it’s Paleo.

Get rid of the temptation – if you’re gonna go at this thing with a full head of steam, remove all the junk food from your house.  It’s going to take a few weeks for your body to adjust to burning fat instead of glucose, and you might want to eat poorly here and there. If there’s no food in your house to tempt you, it will be much easier to stay on target.
Leftover chicken or turkey breast, pork chop, burger, or any meat with avocado/guacamole/guacachoke* smeared on top. You can just roast a pound or two of any kind of meat in the oven for 13 minutes or so and then have all that meat for snacks and meals for the week. Sometimes we make 3-pound hams in our smoker, slice it up, put it in a glass container and then I can just grab a piece of ham when I want it. Any meat will do!

The China Study is frequently cited when criticizing the Paleo Diet – focusing on a vegetarian diet and consuming rice is healthier than the Paleo Diet. I respectfully disagree with that nutritional philosophy and strongly disagree with the conclusions drawn from that book [7], and will leave you to make your own conclusions based on your own self-experimentation.
Don’t let the fact that these cookies are Paleo make you think they don’t taste good. These are now my very favorite cookie! They taste like a legit cookie you would get at a bakery. Crispy on the outer edges, just the slightest bit soft and gooey in the center. And since there is no flour, the cookie has an intense almond butter flavor that I can’t get enough of.
I’m back with another copy-cat recipe. I didn’t realize I was on a roll with them until I was editing these pictures and got thinking about the Paleo Brownie Brittle Bark and the Paleo Samoa Cookie Bars. <—- check them out if you haven’t already! These cookies are inspired by the peanut butter cookie with the peanut butter filling. I used almond butter instead, of course, and they came out so good. It’s kind of crazy how much they taste like peanut butter cookies. I do realize it’s a little ironic the my almond butter cookies are shaped like a peanut 😉 You don’t have to make them peanut shape if you don’t want. I’m sure they would work great as circle cookies as well.

Almond flour: Almond flour can often usually be replaced successfully with raw cashew flour. If you need to make these almond flour chocolate chip cookies nut-free, you can try replacing the almond flour with sunflower seed flour. They may take on a greenish tint, though, as the baking soda will activate the chlorophyll in the sunflower seeds, but it’s harmless.
Hi. I used 1/4 cup of molasses and 3/4 cup of erythritol. When I first tasted the cookie I thought it was a little bit too sweet, but now the taste seems perfect. With the erythritol and molasses in place of sugar, I can eat the cookie without a negative impact on my blood glucose. I like them so much I’m going to bake more and send them to my mother who is also diabetic.
Perfect! I added pecans to your recipe and they came out perfect. The only issue I have is controlling myself so I don’t eat them all at once. I used butter instead of coconut oil and erythritol + molasses instead of coconut sugar to create my diabetic version of your cookie. I also added chopped pecans. Mmm-mm! Thanks. This is the best low-carb cookie recipe I’ve found.
