Bouts of high intensity training as your schedule and recovery allows. This is what people typically think of as fitness – strength training, sprinting, running, CrossFit, any type of structured fitness program falls here. Pay attention to your recovery – make sure you’re not exercising more than you can recover from. Some people can train two times a day six days per week, some manage twice a week before burning out. Respect your level and do what you can manage.

Yes, I’ve used half coconut flour. Still in the oven but they tasted good before I put them in! I also found them too crumbly the first time I made them, so I added a flax egg and half a cup of almond milk and then squeezed them into balls and flattened them. Much better consistency. And I find they need to bake 2-3 minutes longer, maybe even a bit more.
I’ve made these numerous times now after a friend recommended them, and they are fantastic!! I wouldn’t say they’re a healthy substitute to normal/traditional chocolate chip cookies because they’re not quite the same. Rather, I’d say these are in a different category: much more moist, rich with hints of coconut that do not overpower the cookie, and an excellent satiation for the carb- and sugar-wary sweet tooth. Be sure to at least double the recipe because 12 cookies will NOT be enough!

OMG I made these today! I finally found chocolate chips in the store that are gluten free and didn’t have soy lecithin in them (ENJOYLIFE). They even taste good! I searched the entirety of the enter webs until I found this recipe, It is amazing that there are people like Monique out there in their test kitchens experimenting with all of these whole food ingredients! I love cooking but I grew up with Betty Crocker and most of these ingredients are not interchangeable. You have to relearn everything. I don’t have time or money for mistakes. Hey Nichole! I do not recommend using coconut flour as a substitute for almond flour. Coconut flour absorbs significantly more liquid than almond flour and your cookies would almost definitely turn out dry. If you cannot use Almond flour I’d recommend trying tapioca flour or an all-purpose gluten-free flour although I haven’t tested either option so I cannot guarantee results. Bob’s Red Mill makes an all-purpose paleo baking flour but I am not sure if it has nuts or not. You should be able to substitute sunflower butter but if they can eat cashews I’d more highly recommend cashew butter as a substitution!

Wow, these look fantastic…definitely need to make these! I had bad cravings last night and I solved with almonds and raisins, plus a little coconut butter. Probably too many of each of these but it tasted good! Having these cookies in the freezer would have been perfect…I need to get it in my head that cravings will happen and I need to prepare, because usually I end up scrounging whatever sweet thing I can find!
Ghee is a paleo-friendly fat that’s made by heating butter to isolate the butterfat content and remove most of its lactose. Some people debate that because it’s made from dairy (which isn’t considered paleo), ghee isn’t part of a strict paleo diet. However, because removing the milk solids means that ghee is generally well-tolerated by those who don’t digest dairy well, the consensus is that it’s a great fat to include. Additionally, ghee is rich in medium-chain fatty acids that encourage fat loss, reduce inflammation and help to detox the body. It can also be used safely for cooking at high heats.

A more controversial argument for why legumes and common grains are avoided is because of their high phytic acid content, which is thought to reduce the absorption of certain nutrients like iron zinc and calcium (6). However, phytic acid is also found in many paleo approved foods (like almonds and hazelnuts), and is associated with some health benefits - like protective benefits against kidney stones, antioxidant properties and a suggested link to lower risk for colon cancer (7,8,9). Bottom line, there really isn't any evidenced based reason to avoid these foods because of phytic acid.

I’m sorry to hear these didn’t work out for you. I’m not sure what you mean by “the flour never became anything but crumbled powder.” Were you making your own almond flour, and the ground almonds didn’t become fluffy enough? Or do you mean that there wasn’t enough moisture for the cookies to hold together? I’ve made these cookies many times, and this ratio of maple syrup and coconut oil (or butter) has always produced a delicious result. You can always add additional coconut oil or maple syrup if the cookie dough doesn’t look like it will hold together. I hope you and your family have a Merry Christmas, regardless!
I have been baking gluten free for over 10 years and thought I had tried every cookie recipe out there, but alas I had not. I just made this recipe exactly as written and it is truly THE BEST GLUTEN FREE CHOCOLATE CHIP COOKIE OUT THERE! I wasn’t going to make them so big because I like to indulge in moderation but I decided to try giant cookies and I may never go back! I believe the size plays a big part in the success of this cookie but I’ll try them smaller next time and let you know the difference! I used butter and coconut sugar and followed the directions – AMAZING!
The recipes in the photo are actually a low-carb version (see recipe notes!). I swapped out the coconut sugar for granulated erythritol and used a 70% cacao Lily’s Stevia-Sweetened Dark Chocolate Bar. These came out to be just 3.1g net carbs per cookie. (As opposed to 11g per cookie using coconut sugar + Lily’s chocolate.) You can find the rest of the nutrition info for the low-carb version in the recipe notes.

Roll the dough into 8 (75-gram) balls and place the remaining 1/4 cup (43 grams) of chocolate chips on the top and on the sides of the dough balls. You can also roll them into 16 smaller balls but then you need to adjust the baking time (a few minutes less than recommended below). Place 4" apart on the prepared baking sheet. Press the cookies down lightly with the palm of your hand.


This means that embracing the Paleo diet means upping the meat ante, but with one major addendum: that meat must be from high quality sources! Quality, in this instance, is synonymous with grass-fed/pasture-raised, organic, free-range, and (ideally) humanely-raised. (Avoid the additives and nitrates of cured meats.) If your budget won’t allow for meats carrying these labels all the time, go for organic and pastured when you can, prioritizing it for fattier cuts and going budget-friendly on leaner varieties.
Dairy is a touchy subject. It’s widely considered a gray area in the Paleo community. Much of the world’s population cannot tolerate lactose, the sugar found in milk. Mass commercially-produced milk comes from industrially farmed cows, undesirable from both a health and ethical standpoint. That said, grass-fed and pasture-raised cows produce higher-quality milk. Fermented dairy, like yogurt and kefir, also offers the benefits of probiotics. If you choose to consume dairy, opt for the quality stuff. Otherwise, try additive-free nut and coconut milks.
