I had baked these bad boys early Sunday morning just to double check the recipe for the 10th time before this post goes up (no joke). While mixing the dough, I realized I’ve baked these cookies more than anything else in the past two months (the paleo chocolate banana bread was a close second). Even though I’m not paleo or necessarily grain free, I love making paleo treats because they actually fill me up, don’t need as much sugar as your typical dessert and tend to be lower in carbs. Winning in all categories right there.
Although not all of these are strict paleo (some contain coconut sugar and other paleo-friendly sweeteners), they are free from refined sugars, dairy, and grains. The very basic level of it, is that you don't eat carbohydrates, processed meats or sugars, and cut out dairy products. You instead eat plenty of fresh meat, fish, vegetables, fruits and nuts. You can still have oil, provided it's natural – so coconut, peanut & olive oil are all good. Ugh, I tried this recipe, but it was not good. I’d rate it a one star, just a bit above cardboard. Granted, I did not use Honeyville or nuts.com brand of almond flours suggested, but I did use a premium brand (Blue Diamond finely sifted flour) and even weighed out the ingredients to be certain I followed the recipe precisely. I don’t need paleo, but do need gluten-free. I have other cookie recipes that are great, and if a recipe is not great, I don’t want to waste my time or money on it. Sadly, I will not be making this again.

Juli, I made 5 of your recipes on Sunday. They were all wonderful. On the triple protein burgers I substituted Spicy Italian Sausage for the hot dogs. WOW!!!!! It was awesome….so was the Avocado Chorizo Sweet Potato Skins….that is now my favorite sweet potato recipe! When is the next cookbook coming out? The other ingredients are just as simple: almonds, unsweetened apples, walnuts, raisins, and cinnamon—super clean and also incredibly tasty. We recommend these before a workout when your body needs more simple carbohydrates for quick energy. 

Generally, vegetables are dense in fiber and essential vitamins and minerals and are thus a required part of a balanced Paleo diet. Balance is key here: vegetables, while essential, are best consumed alongside a variety of food groups. They, nor any other food group, cannot alone constitute a healthy diet. More than that, not all vegetables are created equal, nutrition-wise. They are, however, delicious and provide tons of creative opportunities to diversify your diet!
We love nuts and they are decidedly paleo diet friendly. Be careful though, as cashews are high in fat and, for some reason, it’s incredibly easy to eat an entire jar of them in one sitting (that’s not just us, is it?). If you’re trying to lose weight, limit the amount of nuts you’re consuming. Otherwise, have at it. I mean, you can’t beat a good almond/pecan/walnut mix, can you?

Grains – especially wheat and anything with gluten. White rice is the least harmful of all grains and is added to dishes on occasions or for variety, it’s also part of the Perfect Health Diet protocol, which is what I follow. Rice is very high in carbohydrates and if you’re not active or trying to lose weight, it should be kept to ‘occasional’ use. Learn more about why grains are avoided in the paleo diet here.

I popped one before my workout yesterday morning and it was perfect. I couldn’t get over how great the texture turned out. You must have tested them a lot to get the texture so perfect.
