Much better than expected! I had to use honey instead of maple syrup (I was out)… And I wasn’t sure they were going to turn out well – the batter was super crumbly, so I added 2 more tbsp of coconut oil and then using a cookie scoop, I mashed the batter into it to make rounded balls. The ones I mashed in like that didn’t crumble when they came out of the oven – they stuck together well.
I believe in parchment paper. It’s a DREAM for clean up and prevents burning. I hardly ever bake without it, and these ginger cookies are no exception. Some ginger cookies have a tendency to scorch on the bottom, and I’ve found that a light-colored baking sheet lined with parchment paper (or a silicone baking mat) is a fail proof plan for perfectly baked ginger cookies. (I think even Ina would approve.)

I had baked these bad boys early Sunday morning just to double check the recipe for the 10th time before this post goes up (no joke). While mixing the dough, I realized I’ve baked these cookies more than anything else in the past two months (the paleo chocolate banana bread was a close second). Even though I’m not paleo or necessarily grain free, I love making paleo treats because they actually fill me up, don’t need as much sugar as your typical dessert and tend to be lower in carbs. Winning in all categories right there.
Gluten is a protein found in things like rye, wheat, and barley. It’s now being said that much of our population may be gluten-intolerant (hence all the new “gluten-free!” items popping up everywhere).  Over time, those who are gluten intolerant can develop a dismal array of medical conditions from consuming gluten: dermatitis, joint pain, reproductive problems, acid reflux, and more.[2]
This step is actually optional if you do not mind having flecks of zucchini visible in your zucchini cookies! However, in my house, my kids would not approve of anything green in their cookies, so I always blend the zucchini with the other wet ingredients! I also really enjoy the texture of these paleo breakfast cookies when the zucchini is fully blended.
Note that any products made with any one or a combination of these grains are also off the cards. That means most breads, pastas, flours, baked goods and the majority of processed dry goods. Even if a product claims to be gluten free, it can still contain other grains (or pseudo-grains like quinoa or buckwheat) that subject the body to anti-nutrients like lectins.
These nutrient-packed treats make for a convenient and delicious snack that’s paleo approved. They’re a great source of long-lasting energy and their high fat content will keep you full for longer. It is worth noting though, that because many types of nuts and seeds do contain phytic acid and other anti-nutrients that disrupt optimal digestion, it’s recommended that you consume them in moderation.
Almonds are paleo-approved, but it can sometimes be hard to just stop at a handful. While almonds are packed with protein, healthy fats, and an amino acid L-arginine that can help you burn more fat during workouts, they are also calorie dense—if you’re not careful, you can end up downing hundreds of calories worth of almonds in one sitting. We made these this afternoon and they were great! My husband is fond of mint with chocolate so instead of chocolate pieces or chips, we used Andes Mints pieces which I have only found at Walmart. We used a 1″ cookie scoop and came out with 30+ cookies. We wanted them a little more crisp, so we cooked them longer than the recipe’s 10 minutes. There’s evidence that our ancestors pressed olives to make antioxidant-rich olive oil as far back as 7,000 years ago. Therefore, olive oil is considered to be a paleo ingredient and rightly so as it’s exceptional nutritional profile provides us with numerous benefits. Stephany – I’m *wish* we could! I prefer baking with coconut oil whenever possible, but when I’ve tried it, the cookies spread so much and didn’t get the crackly top. I couldn’t ever really cobble together the right amounts that would offset the spread and texture change. If you try it and have better luck than me, I’d love to know what other adjustments you make!

These apple chips will do a good job of satisfying your need for something crunchy, as well as something sweet. They’re baked, not fried, so right off the bat you’re coming out ahead than if you were to eat an ordinary chip. These are apples and not potatoes so you’re avoiding eating potatoes, one of the foods not allowed on Paleo. The ingredients list contains just two items, apples and cinnamon, so this recipe is as pure as it gets, especially if you’re using organic apples, like you’re supposed to.

Pumpkin seeds are one of the healthiest seeds you can eat, and making them taste as good as they can means you’ll be more inclined to eat them, and therefore more likely to benefit from the nutrients they contain. This recipe uses real jalapenos to deliver the heat, and keeps things elegant by only using the requisite number of ingredients to get these to taste right. For example, there’s olive oil, which is used to help roast the seeds, but it also helps the paprika and salt stick to the seeds so you get flavor on each one.
So I’m not one to make my food in football shapes. Or use dye to color my food in my favorite teams colors. Probably because I don’t have a favorite team. But my home states team (the Broncos) are in the Superbowl this year so I’m obligated to act excited. I’d honestly rather just be moving into my new apartment and organizing crap than watching to game. But for social stigmas and reasons, I will be watching to game. Just like us, our ancestors couldn’t resist the smell of roasting pork so it’s also on the paleo menu. Containing all-important muscle building protein with energy-filled fat, pork is also rich in the B vitamins, niacin, phosphorus and selenium which all contribute to keeping your body functioning well from the inside out. Naturally cured bacon is generally okay too. Just be wary of processed pork products that are infused with harmful chemicals.
These are such fun to make! I used regular sugar instead of coconut sugar because I was out. They are very quick to mix up (I didn’t wait for the nut butter or egg to come to room temperature because I am impatient) and very quick to bake. I appreciate easy, delicious, gluten free recipes that I can make with my kids and not end up irritated or with a huge mess to clean up! We will be making these again and often I suspect. Hi Brenda. I haven’t tried using a sugar replacement in these cookies, but I would definitely try a granulated sugar replacement (like Xylitol and Splenda) as opposed to the drops. Coconut flour is much more absorbent than almond flour so I would not recommend using it in these cookies. As long as the SF chocolate is OK for baking, that will be totally fine. Good luck!


These red pepper poppers are great for game day snacking, or anytime you get the notion. They do take a bit of time to make, so maybe not the best choice if you are looking for something fast to make to lessen your hunger pangs. These have meat and vegetables in pretty equal amounts, with bacon wrapped around the peppers and chicken breast acting as the stuffing. They kick it up a notch with some red pepper flakes so these will be spicy, bacony, and loaded with flavor. You might need something to dip them in, might we suggest this Paleo friendly Ranch dressing? 

Hi! This might seem like an odd question, but do you think I could bake / cook these on an electric griddle? 5 mins, then a flip and 5 mins more? I am thinking to try this at preschool and want a recipe that will cater to all children, with respect to food allergies / sensitivities or parents nutritional wishes. We don’t have an oven, just the electric griddle pan. Thoughts?

There is little argument over the health benefits of fruits and vegetables. They are chock-full of vitamins, minerals, fiber and antioxidants.
