My first trick is the combination of flours. The texture is just right, thanks to a blend of almond flour and arrowroot (or tapioca starch). The starchy arrowroot keeps them light and crisp, while the almond flour helps them turn golden and gives them enough body. I love that they fill my house with notes of molasses and zingy ginger. Plus, they freeze like a dream, so you can always bake them ahead of time and pull them out when needed. (Like, every night after you tuck your kids in bed, for instance).

Chocolate chip cookies without any sugar or chocolate wouldn’t really taste like chocolate chip cookies anymore…you could try substituting a calorie-free sweetener for the sugar if that’s what you’re looking for. Since cacao mass has no sweetener, I imagine it would be pretty bitter in cookies, but you could give it a shot – I’ve never used it before so I’m unsure of how it will work.
If you're interested in the paleo plan but don't think you want to be so strict, you don't have to be all-or-nothing with your approach. Consider adopting some eating patterns from paleo and skipping the ones that don't work for you. For example, try just eating more fruits and vegetables and cutting down on added sugars. Hi Brenda. I haven’t tried using a sugar replacement in these cookies, but I would definitely try a granulated sugar replacement (like Xylitol and Splenda) as opposed to the drops. Coconut flour is much more absorbent than almond flour so I would not recommend using it in these cookies. As long as the SF chocolate is OK for baking, that will be totally fine. Good luck!

Factor in the “carb flu” you might go through in the first few weeks (as your body gets weaned off of carbohydrate fuel and habits), and most people give up on the Paleo diet long before it creates lasting change!

It is worth noting though, that because many types of nuts and seeds do contain phytic acid and other anti-nutrients that disrupt optimal digestion, it’s recommended that you consume them in moderation.

One way to avoid eating potatoes as a snack is to replace a popular snack like potato chips with a healthier version. Using zucchini in place of the potatoes is a great idea, and gives you added nutrition. Zucchini makes a great choice to make into a chip because all it requires is some slicing and you have nice round pieces ready to be made into chips. The second my mom saw these, she immediately started making plans to hide and portion them. She has the same problem I do with, ya know, not eating the whole batch. In one sitting.
