I didn’t realize I wouldn’t have internet at my in-laws over the holidays. :/ I’m happy to hear that you liked the cookies so much! :) I use both types but prefer refined because I don’t like any coconut taste in them. You can use a little less sugar but then the cookies probably won’t be as chewy and will be more cakey. Thanks for your comment and sorry again!

If you’re used to combating the afternoon slump with yogurt, you’ll love this Paleo chia pudding. While the chef here enjoys it at breakfast, it’s really simple to convert this into a snack: instead of making these in a bowl, prepare in mason jars for perfect portions you can take to work with you. I subbed the coconut flour with cricket flour (yes, ground up crickets) and got good results. I made it with coconut oil and eggs and portioned them out and then froze them before baking. I baked the first batch at 325 in a convection oven and it spread quite a bit so I baked the next batch at 350 (convection oven) and it still spread but much less.

The best part about paleo baking is that you actually get filled up and even though they are such delicious cookies, I was very satisfied after only eating two. With other cookies made with regular flour, I tend to overeat. Thank you for this recipe. It is absolutely going to be a keeper! My children love these and they don’t even care that they are eating something healthy. I like to make 2-3 pans of them and save them for later. They can be eaten just like potato chips if you want to. These zucchini chips are a great snack but they can also be a great side dish vegetable for dinner. Just don’t cook them until they’re crispy. I cook mine for about half an hour for a side dish. Sometimes I like them without all the spices so I just leave out the curry powder and garlic powder. I also think they are best when I use Course Real Salt.

DIY roasted nuts are easier than you’d think—all you need is a bag of mixed nuts, an egg white, and go-to spices: sea salt, pepper, rosemary, sage, garlic powder, and paprika. Coat the nuts in the egg white in one bowl, and mix all the spices in another. Pour the spice mix over the nuts, transfer to a baking sheet lined with foil or parchment paper, and roast for 16 minutes.
We have a penchant for finding an absurd amount of ways to sweeten our food, as evidenced by our sweetener-laden grocery store aisles. Our many sweeteners also have many names, making it difficult to suss out the added sugars in foods. There are only a few Paleo-friendly sweetening agents: fruit, raw honey, pure maple syrup, and coconut sugar, all of which are low on the glycemic index. Still, these should not be a diet staple.

I’ve been doing a lot of sweets lately and I think it needs to come to an end! My kids would rather I not stop though 🙂 And I agree that outside pressure often gets us to do things that aren’t good for us – a lot of times without realizing. It’s hard to step back and figure out what’s actually good for US on the inside. I struggle with that sort of thing often.

In essence, it's up to the individual to decide whether or not to include chocolate in their nutritional regime. Paleo-ers who do say yes to chocolate often choose the dark variety -- it tends to be less processed and lower in sugar.
Note that any products made with any one or a combination of these grains are also off the cards. That means most breads, pastas, flours, baked goods and the majority of processed dry goods. Even if a product claims to be gluten free, it can still contain other grains (or pseudo-grains like quinoa or buckwheat) that subject the body to anti-nutrients like lectins.
