These could possibly be my favorite cookie, ever. I love chocolate and peppermint together. They are so easy to make that my daughter makes them all the time. They have to be baked or cooked at all. The hardest part is waiting for them to cool and set in the frig for an hour. The candy canes are just for show because they aren’t Paleo. You can get all the peppermint flavor you need with the peppermint essential oil. If you aren’t 100% strict Paleo, go ahead and add a little bit of peppermint candy; I won’t tell anyone.
The paleo diet eliminates dairy because its advocates say many people are lactose intolerant, and because eating dairy has been associated with Crohn’s disease, among other claims. Sure, there's a bit of debate as to whether true Paleo-ers can have foods like chocolate (which is made with milk solids and sugar). OMG I made these today! I finally found chocolate chips in the store that are gluten free and didn’t have soy lecithin in them (ENJOYLIFE). They even taste good! I searched the entirety of the enter webs until I found this recipe, It is amazing that there are people like Monique out there in their test kitchens experimenting with all of these whole food ingredients! I love cooking but I grew up with Betty Crocker and most of these ingredients are not interchangeable. You have to relearn everything. I don’t have time or money for mistakes. Which is perfect because I have recently been diagnosed with an autoimmune disorder and love that I can still bake and enjoy a homemade chocolate chip cookies with my children on a snow day. These make a great snack because they have a lot going on. There’s sweet potato in them, so you’ve got fiber built into them. They’ve also cut out all grain, using almond meal and coconut flour instead. The sweetness comes from honey, not from the coconut because the coconut is unsweetened. Sweet potato is great as a snack because it is digested slowly and releases energy over a longer time period.
In a large bowl, place the almond flour, coconut flour, salt and baking soda, and whisk to combine well. Add the palm sugar, and whisk again to combine, working out any lumps in the sugar. All you do is mix the ingredients, put them into a mold either by pouring or using a plastic bag with a small hole in the corner. The Primal Blueprint leaves room for legumes in close moderation, but those on a paleo diet tend to steer clear of them. Hi Steve, coconut flour absolutely will not work here because it’s 3x more absorbent than almond flour. You only want to use coconut flour in recipes that call for it because it performs so uniquely. If you had to use coconut flour, you would want to use 1/3 of the amount, but I would recommend using my coconut flour chocolate chip cookies instead, which have been formulated specifically to use that kind of flour.

Legumes are not allowed on paleo because of their high content of lectins and phytic acid. Similar to grains, this is a point of controversy in the scientific community. In fact, lots of research supports eating legumes as part of a healthy diet because they are low in fat and high in fiber, protein and iron.

With seafood, wild and sustainably caught is always best, as is sourcing your seafood from areas that are less likely to suffer from pollution and heavy metal contamination. Generally speaking, larger predatory fish are more likely to have higher levels of heavy metals than smaller fish and mollusks. It’s not a reason to avoid larger fish entirely, but it’s good to balance intake between larger and smaller fish varieties if you’re concerned about pollution.
With high amounts of heart-healthy omega-3’s, fish is a great form of protein to regularly include in a paleo diet. Select wild-caught fish to avoid ingesting the harmful chemicals that farmed fish are regularly fed. Both low-fat, white varieties of fish are considered paleo as well as high-fat fish such as salmon, tuna and mackerel and should both be included to satisfy your daily protein and fat requirements.
