Alice, I’m sorry you weren’t pleased with this recipe. Assuming you didn’t omit or substitute any other ingredients, I imagine it’s due to your almond flour brand—although “cardboard” is hard to imagine unless maybe you left out the sugar? Almond flours are not all created equal and finely-sifted is definitely not the same as finely ground, which is why I specify. The recipe will work when made as directed, though, as will my other recipes!

Much better than expected! I had to use honey instead of maple syrup (I was out)… And I wasn’t sure they were going to turn out well – the batter was super crumbly, so I added 2 more tbsp of coconut oil and then using a cookie scoop, I mashed the batter into it to make rounded balls. The ones I mashed in like that didn’t crumble when they came out of the oven – they stuck together well.

In a large bowl, place the almond flour, coconut flour, salt and baking soda, and whisk to combine well. Add the palm sugar, and whisk again to combine, working out any lumps in the sugar. Create a well in the center of the dry ingredients, and add the coconut oil, eggs and vanilla, mixing to combine after each addition. Add the chocolate chips tossed in coconut flour to the cookie dough, and mix to combine. The dough will be quite soft.
The paleo or primal lifestyle also promotes healthier living. Better sleeping habits. Stress reduction. Functional fitness and movement. Adequate sun exposure. Spending more time outdoors. Hi Brenda. I haven’t tried using a sugar replacement in these cookies, but I would definitely try a granulated sugar replacement (like Xylitol and Splenda) as opposed to the drops. Coconut flour is much more absorbent than almond flour so I would not recommend using it in these cookies. As long as the SF chocolate is OK for baking, that will be totally fine. Good luck!

They did not rise of consequence, but I’m not complaining since they tasted excellent and they were the treat I was seeking. Had never used coconut sugar and it was surprisingly good. Hello. This was my first time making a paleo/gf cookie. They came out pretty tasty but are a little too coconut-y for my liking (I think maybe I used too much coconut oil, which I will adjust next time). However, something might have been off with my dough overall b/c it was brown in color, not light like yours. Maybe I just need to use a little more almond flour & a little less coconut sugar, but I welcome any thoughts/suggestions you have. I will definitely be trying again. Thanks!

Fasting for a predetermined period of time, shortening the eating window. Popular IF protocols include daily 16 hour fasts with 8 hour feeding windows, or weekly 24 hour fasts. Less of a “diet,” more of a philosophy. You can combine damn near any diet with a practice of intermittent fasting, be it Paleo, Primal, vegan, vegetarian, Bulletproof, Standard American, or anything between.
These look so chewy and gooey and delicious! I was actually considering doing a Paleo month to figure out if any of my lingering stomach symptoms are due to dairy or other allergens, but I think it would be tough for me to give up autumn baked goods and it’s hard to be tree nut free and still Paleo. Maybe these cookies with coconut flour would work 🙂
I’m sorry to hear these didn’t work out for you. I’m not sure what you mean by “the flour never became anything but crumbled powder.” Were you making your own almond flour, and the ground almonds didn’t become fluffy enough? Or do you mean that there wasn’t enough moisture for the cookies to hold together? I’ve made these cookies many times, and this ratio of maple syrup and coconut oil (or butter) has always produced a delicious result. You can always add additional coconut oil or maple syrup if the cookie dough doesn’t look like it will hold together. I hope you and your family have a Merry Christmas, regardless!
FYI Scott Madden the Paleo diet is really just a general blueprint and most people just do the best that they can–some also just eat according to what they can handle or need and still consider it “paleo.” There are also many different options when it comes to protein powder (many people use pea, hemp etc) and not all of them contain wheat, soy, casein or whey.

The only caveat for paleo dieters is that some vegetables are starchy (e.g., potatoes) and some fruits are higher in sugar (e.g., bananas). So, if you are trying to lose weight or watch your blood sugar levels, eat these in moderation. In fact, potatoes are banned from some versions of the diet.

Remove the meat from the marinade and lay it out on your counter on top of some paper towels. The goal is to get it as dry as possible. Lay paper towel over top and pat it dry. Now’s the time to put it into your dehydrator or oven. You can thread the meat onto wooden skewers (near one end of each piece) and lay the skewers perpendicular to the oven wrack’s bars (use the top shelf). Make sure the meat hangs down. Place cooking sheets lined in foil beneath the meat to catch any drips.

Balance is key here: vegetables, while essential, are best consumed alongside a variety of food groups. They, nor any other food group, cannot alone constitute a healthy diet. More than that, not all vegetables are created equal, nutrition-wise. They are, however, delicious and provide tons of creative opportunities to diversify your diet!
Unless a package of beef jerky says it’s Paleo, it’s best to make it on your own, and this recipe will walk you through the process. She’s come up with the perfect blend of spices and the right method for how to get the meat just right. You won’t want to go back to store bought jerky once you make a batch of this. You get to do quality control, choosing lean cuts of sirloin to make it. Then add the spices and seasoning like garlic powder and onion powder. Red wine even makes an appearance, and you’ll be happily surprised at the finished product.
Stephany – I’m *wish* we could! I prefer baking with coconut oil whenever possible, but when I’ve tried it, the cookies spread so much and didn’t get the crackly top. I couldn’t ever really cobble together the right amounts that would offset the spread and texture change. If you try it and have better luck than me, I’d love to know what other adjustments you make!

In US English recipes, almond flour always means what you probably call “ground blanched almonds.” We don’t even have the deoiled / defatted “almond flour” that’s sometimes sold in other countries. Coconut flour is coconut flour. “Coconut flour is a soft flour produced from dried coconut meat.” I hope that helps!

I didn’t realize I wouldn’t have internet at my in-laws over the holidays. :/ I’m happy to hear that you liked the cookies so much! :) I use both types but prefer refined because I don’t like any coconut taste in them.
